Fresh Pasta

Convito's "Pasta Fresca" is moist and flexible not like the pasta you are used to buying in a box. This is because we make it fresh everyday and immediately refrigerate it to preserve the flavor and aroma of the eggs and the semolina used in our recipe. We also sprinkle it with semolina to prevent sticking.


Store in refrigerator. It can be kept for 4-5 days.

Cooking Instructions

  • Bring a large quantity of salted water to a boil (4 quarts per pound of pasta) & drop in pasta (separate if needed).
  • Stir regularly.
  • Cooking time varies with the type of pasta, see table below.
  • Cook until "al dente" (cooked through, but still firm to the bite).
  • Drain in a colander & shake dry.
  • Transfer to a large plate or bowl and add sauce.

Note: After the first day you may have to cook the pasta longer. One pound of past should be sufficient for 2-3 people as a main course, 4-5 for a side dish.

Fettuccine, Spaghetti, Fusilli, Orecchiette, Bucatini, Mafalda (curly pappardelle) Ravioli, and Lasagna (by special order only).

Egg, Spinach, or Whole Wheat pasta available

Egg, Spinach, Tomato, Pesto or herb, Lemon Garlic, Red Chili and a flavor of the month.
